HIBOK-HIBOK (CAINTA, RIZAL)
Hibok hibok is a Filipino dessert or kakanin . These chewy, sticky, and gooey balls of sweetness are made out of glutinous rice mixed with water and ground to a fine paste (galapong), filled with sweet monggo paste, and cooked in coconut milk. It is a specialty of Rizal province, particularly the town of Taytay. Munggo na ibinalot sa giniling na bigas at niluto sa gata. Other than that, Hibok-hibok is also interesting because there is also a ground red monggo beans inside! It actually seems to resemble the mochi dessert that is increasingly growing in popularity with Metro Manila foodies, thanks to some popular brands like Dezato in Hemady New Manila, and the Mochiko brand of Mochi Ice Cream that is becoming the current cult favorite.

BUDBOD FRIED RICE (RIZAL)
Budbud fried rice originates in the province of Rizal. It is a fried rice, usually colored with soy sauce or the likes, topped with scrambled egg, onion spring, tomatoes and meat or fish. It is a one meal dish. I first got a taste of it at food stand in Tiendesitas and you can pair it with barbecue or other viand. Though I think it’s not authentic, it really taste good. Budbud fried rice is literally a fried rice seasoned with soy sauce then tossed with meat and then topped with egg, tomatoes and onion spring.Budbod is what you call the rice dish that’s been topped/sprinkled (binudbod) with meat, tomatoes, spring onions, sometimes egg, sometimes anything goes.

MINALUTO (ANGONO, RIZAL)
The province of Rizal is known as one of the leading culinary spots in the country, with many of its towns having perfected their own unique manner of preparing food. Angono resident poet and travel writer Celine Reyes recommends a certain dish called Minaluto. Minaluto is a local version of Spanish paella. The serving of minaluto is huge and 1 order alone could feed our whole group. It’s rice served with pork, chicken, seafood such as squid, shrimp and crabs, salted egg and various vegetables. We had minaluto with yellow rice and minaluto with squid rice.
